The Whisky Bar · Strait Street
Down the black door, under the stone. Open until midnight, with the kitchen on until eleven.

Speyside through Islay, and a good deal in between. Every one of them is poured by the glass — there is no bottle you have to commit to, and no reason to order the thing you already know.
The list is long on purpose. It is there to be worked through slowly over a winter, not admired from across the room. If you tell the bar what you have liked before, you will get somewhere better than if you read the list yourself.

There is no sign worth looking for. Look for the black facade, and the tables outside it.
Through the door the stairs go down. At the bottom there is a lounge with high tables, which is where most people end up first. Past a low arch is the whisky bar itself, and through a door beyond that, the bistro under the vaults. Keep going and the stairs take you up to the terrace bar and out onto Old Theatre Street, on the square — which is the other way into the same building, and the reason people who came for one drink are still here at midnight.
Tables out on Strait Street, at the door. Good most of the year — and if the weather turns, we move you inside.
Book a table
Through the door past the bar, cut into the rock. The warmest room in the building, and the one to book when the weather turns.
